The Excalibur Rotary Rack Oven is an all purpose rack oven for use in retail bakeries, supermarkets, hotels, bagel shops, restaurants, school kitchens, and other food service operations.  The oven is suitable for baking all types of breads, rolls, pies, sweet goods, croissants, cakes, cookies, bagels, etc.  It can also be used for thawing, roasting, and reconstituting frozen foods.  You are assured of a uniform, high quality product every time.

The Excalibur Rotary Rack Oven reduces the handling during make-up as complete racks can be moved from freezer to retarder to proof box to the rack oven instead of individual pans.  This offers savings in time and labor cost.

The exterior and interior is stainless steel construction with stainless steel door with window and full view of baking chamber.

The Excalibur Rotary Single Rack Oven uses a minimum of floor space approximately 52” deep X 62” wide X 79” high.  The oven chamber holds one single rack with a capacity of up to 24 pans.

The oven has a built–in effective automatic steam injection system.  No outside steam source is required.  A water connection is all that is needed.

The rack is easily loaded in the baking chamber.  The rotating rack holding mechanism holds the rack from a top skyhook.

An adjustable airflow system produces uniform baking from top to bottom of rack.  The EXL-I and EXL-II Rotary Rack Ovens assure a fast start up (approximately 20 minutes) and high efficiency due to its dual capacity heating system.

The compact design will save money as well as space.  Operational costs will be lower as the EXL-I and EXL-II use less gas for better performance. 

REMEMBER:  Not all ovens can produce a quality bagel.  Although the Excalibur Oven can bake all types of products, it was designed with bagels specifically in mind.  The EXL-I has 225,000 BTU/H and the EXL-II has 600,000 BTU/H for quick recovery times.  The stainless steel frame also won't buckle at high temperatures needed for baking bagels.
